We spent an afternoon in the Tree Kitchen with the self professed Pretend Health Freak, Sarah Bambey having a chat and whipping up a yummy Bountylicious Slice!

1. What started you on your journey to becoming the Pretend Health Freak?

I always loved making recipes and getting in the kitchen whenever I could. Although my treats used to be a lot more indulgent than they are these days, which lead to some health ailments. When I started learning about clean eating I was really interested but still wanted to satisfy my sweet tooth. So, I started making clean recipes and sharing them on Instagram… and the rest is history! Hah.

2. What does a regular day in the life of the Pretend Health Freak look like? 

Honestly, no two days are the same! Some days I’ll be making my recipes for the local salon who I provide treats to. Other days I’ll be responding/emailing different companies about collaborations, writing blog posts, and creating new content. And on a completely random note, some days I work at a primary school as an SLSO.

There’s always yoga or exercise squeezed in there somewhere too!
It’s fairly balanced which I like.

3. Do you have favourite ingredient and tool in the kitchen and why?

At the moment it’s rice malt syrup because it’s a great texture, subtle sweet taste, fructose free, and cheap! I use it in most recipes as a sweetener.

My Vitamix is the best tool! As you can see with the Bounty Slice, it gets the roughest ingredients to become smooth and creamy. Which means delicious raw treats! It’s the only item in my online store because I just love it so much and think everyone should have one haha.

4. Aside from a change in diet, what other healthy lifestyle choices do you think more people need to make?

I think slowing down and asking yourself what really makes you happy and what doesn’t, then acting on it. So many people are just rushing around, working in jobs they hate, and feeling unhappy/unsatisfied. I think happy = healthy, and for me nothing is more important than that.

5. Other than health and food, what are some of your hobbies?

I love taking my dog for walks in different locations, going for nature walks or doing some form of exercise with friends, going new places, and CREATING things. Whenever I’m being creative I’m having fun.

6. Since we are a fashion brand after all, how would you describe your personal style?

In one word: unpredictable. I don’t really fit into any one particular look. One minute I’m all skater girl, next minute I’m indie/hippie, then on another day I’m just really classic haha! I guess I like to mix things up.

7. If people want to get in touch and check out some of your recipes, where might they find them?

Instagram is my main platform for recipe sharing but I also share on my blog. I’ve also just released a free recipe ebook of 15 clean eating treats that can be downloaded here.

8. And finally, where do you hope to see the Pretend Health Freak in five years?

I hope to be inspiring as many people as possible around the world to enjoy food, live healthy, and be happy! There’s so many directions it could go, but at this point I’m happy to just keep working hard and see where it takes me.

Bountylicious Slice Recipe

Makes: 16-20
Time: 30 mins

INGREDIENTS

Base

2/3 C almond meal
1/3 C coconut flour
2 Tbsp coconut oil
2 Tbsp rice malt syrup
1 Tbsp cacao powder
1 Tbsp coconut milk

Coconut Layer

3 C shredded coconut
3 Tbsp coconut milk
2 Tbsp coconut oil
2 Tbsp rice malt syrup

Topping

3 Tbsp coconut oil
2 Tbsp rice malt syrup
1 Tbsp cacao powder
1/2 Tbsp nut butter

METHOD

Line medium sized square cake tin with baking paper.
Combine Base ingredients and press into cake tin. Refrigerate.
Process coconut layer ingredients until relatively smooth. Pour over base. Freeze.
Combine topping ingredients with fork until smooth. Pour over coconut layer and refrigerate or freeze.
Cut and store in a sealed container... or eat!
